Pizza Enchiladas with Ground Beef

Ingredients
  

For the Pizza Enchiladas
  • 1 lb ground beef the heart of our enchiladas, packed with flavor
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can (15 ounces) pizza sauce the star ingredient that ties it all together
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tsp Italian seasoning a blend that enhances the pizza flavor
  • 1 tsp chili powder for a hint of spice
  • 8 large flour tortillas the perfect wrap for all that goodness
  • 2 cups shredded mozzarella cheese melty and gooey
  • 1 cup shredded cheddar cheese adds a nice sharpness
  • Fresh basil or parsley for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: In a large skillet over medium heat, cook the ground beef until it's browned. Drain any excess fat.
  3. Step 3: Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant.
  4. Step 4: Stir in the pizza sauce, black beans, corn, Italian seasoning, and chili powder. Cook for an additional 5 minutes, stirring occasionally to combine.
  5. Step 5: Spoon a portion of the beef mixture onto each tortilla. Sprinkle a little mozzarella cheese over the filling, then roll up the tortillas and place them seam-side down in a greased baking dish.
  6. Step 6: Pour any remaining beef mixture over the enchiladas and sprinkle with the remaining mozzarella and cheddar cheese.
  7. Step 7: Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  8. Step 8: Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. They can also be frozen for up to 3 months.
