- Step 1: Preheat your oven to 350°F (175°C) for even baking.
- Step 2: In a large skillet over medium heat, cook the ground beef until it's browned. Drain any excess fat.
- Step 3: Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant.
- Step 4: Stir in the pizza sauce, black beans, corn, Italian seasoning, and chili powder. Cook for an additional 5 minutes, stirring occasionally to combine.
- Step 5: Spoon a portion of the beef mixture onto each tortilla. Sprinkle a little mozzarella cheese over the filling, then roll up the tortillas and place them seam-side down in a greased baking dish.
- Step 6: Pour any remaining beef mixture over the enchiladas and sprinkle with the remaining mozzarella and cheddar cheese.
- Step 7: Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- Step 8: Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. They can also be frozen for up to 3 months.
