Greek Lemon Shrimp Pita Wraps with Dill Garlic Feta Sauce

Today, I'm excited to share with you a recipe for Greek Lemon Shrimp Pita Wraps with Dill Garlic Feta Sauce that is not only quick and easy but also bursting with deliciousness!

Ingredients
  

For the Greek Lemon Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 whole lemon juice of 1 lemon
  • 2 cloves garlic minced
For the Dill Garlic Feta Sauce
  • 1 cup feta cheese crumbled
  • 1/2 cup Greek yogurt
  • 2 tbsp fresh dill chopped
  • 1 clove garlic minced for the sauce
  • 1/2 whole lemon juice of 1/2 lemon
  • 4 whole whole wheat pita breads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup cucumber diced

Method
 

  1. Step 1: In a mixing bowl, combine the shrimp with olive oil, lemon juice, minced garlic, salt, pepper, and oregano. Toss to coat and let marinate for 15 minutes.
  2. Step 2: While the shrimp is marinating, prepare the dill garlic feta sauce. In a medium bowl, mix together the crumbled feta, Greek yogurt, dill, minced garlic, lemon juice, salt, and pepper until smooth. Set aside.
  3. Step 3: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through.
  4. Step 4: To assemble the wraps, warm the pita breads if desired. Layer each pita with shredded lettuce, diced tomatoes, cucumber, and cooked shrimp. Drizzle with dill garlic feta sauce.
  5. Step 5: Fold the pita wraps and serve immediately. Enjoy every bite!

Notes

If you have leftovers, store the components separately in airtight containers in the fridge. The shrimp and sauce will keep for about 2 days. Just reheat the shrimp gently before assembling your wraps again!
