Ingredients
  

For the Chicken Filling
  • 2 cups cooked chicken shredded
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup salsa mild, medium, or hot based on preference
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Taquitos
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a mixing bowl, combine the shredded chicken, cheese, salsa, cumin, garlic powder, salt, and black pepper. Mix until everything is well blended.
  3. Step 3: Warm the tortillas in the microwave for about 20 seconds to make them pliable.
  4. Step 4: Place 2-3 tablespoons of the chicken mixture onto each tortilla and roll them up tightly.
  5. Step 5: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Step 6: Lightly spray the taquitos with cooking spray or brush them with olive oil.
  7. Step 7: Bake in the preheated oven for 15-20 minutes, or until golden and crispy.
  8. Step 8: Remove from the oven and let cool slightly before serving. Enjoy!

Notes

These taquitos are best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the fridge for up to 3 days.
