Crustless Sun-Dried Tomato Quiche with Spinach and Feta

This dish is not only easy to whip up, but it’s also absolutely packed with flavor and nutrition. Ingredients
  

For the Quiche
  • 6 large eggs The base of our quiche, providing a fluffy texture.
  • 1 cup milk Adds richness and creaminess to the dish.
  • 1 cup fresh spinach chopped
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano A lovely herb that adds depth to the flavor.
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). This will ensure your quiche bakes evenly and comes out perfectly fluffy.
  2. Step 2: In a skillet, heat a small amount of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Step 3: Add the chopped spinach to the skillet and cook until wilted, which should take another minute or two. Remove from heat and let cool slightly.
  4. Step 4: In a large bowl, whisk together the eggs and milk until well combined. Stir in the sun-dried tomatoes, feta cheese, sautéed spinach mixture, dried oregano, salt, and pepper.
  5. Step 5: Pour the mixture into a greased pie dish or baking dish. Make sure it’s evenly distributed for even cooking.
  6. Step 6: Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  7. Step 7: Allow to cool for a few minutes before slicing and serving. Enjoy every delicious bite!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze slices for up to 2 months. Just be sure to wrap them well to maintain freshness!
