For the Chicken Marinade
  • 500 g boneless chicken cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 2 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 2 tbsp lemon juice
For Coating
  • 2 tbsp rice flour
  • 1/4 cup all-purpose flour
For Frying
  • Oil
For Garnish
  • Curry leaves
  • Fresh coriander

Method
 

  1. Step 1: In a large bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, lemon juice, and salt. Mix well to form a marinade.
  2. Step 2: Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, but if you can, let it marinate overnight for even more flavor.
  3. Step 3: After marinating, add rice flour and all-purpose flour to the chicken mixture. Mix until each piece is evenly coated.
  4. Step 4: Heat oil in a deep frying pan over medium heat. Once hot, carefully add the marinated chicken pieces in batches. Fry until golden brown and cooked through, about 5-7 minutes.
  5. Step 5: Remove the fried chicken and drain on paper towels to absorb excess oil.

Notes
