Ingredients
  

For the Cheesy Shrimp Casserole
  • 1 lb shrimp peeled and deveined
  • 2 cups cooked rice white, brown, or cauliflower rice
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup breadcrumbs optional for topping
  • 2 tbsp butter melted, optional for breadcrumbs

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the shrimp, cooked rice, cheddar cheese, cream of mushroom soup, milk, bell pepper, onion, garlic powder, paprika, salt, and black pepper. Mix well until everything is evenly incorporated.
  3. Step 3: Transfer the mixture into a greased 9x13-inch baking dish.
  4. Step 4: If you're using breadcrumbs, combine them with melted butter and sprinkle evenly over the top of the casserole.
  5. Step 5: Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden on top.
  6. Step 6: Remove from the oven and let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze it before baking for up to 2 months.
