Ingredients
  

For the Carne Guisada
  • 2 lb beef chuck
  • 2 tbsp vegetable oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 2 tomatoes diced
  • 2 cups beef broth
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 bay leaves
For the Flour Tortillas
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp lard or shortening
  • 3/4 cup warm water

Method
 

  1. Step 1: In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Step 2: Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Step 3: Stir in the diced tomatoes, beef broth, cumin, chili powder, paprika, salt, pepper, and bay leaves.
  4. Step 4: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender. Adjust seasoning as needed.
  5. Step 5: In a mixing bowl, combine the flour, baking powder, and salt. Mix well to ensure even distribution.
  6. Step 6: Add the lard or shortening and mix until the mixture resembles coarse crumbs.
  7. Step 7: Gradually add warm water, mixing until a dough forms. Knead for about 5 minutes until smooth.
  8. Step 8: Divide the dough into 8 equal portions and roll each portion into a ball. Let rest for 15 minutes.
  9. Step 9: On a floured surface, roll out each ball into a thin circle.
  10. Step 10: Heat a skillet over medium-high heat. Cook each tortilla for about 1 minute on each side, until lightly browned and cooked through.
