Method
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the head in the boiling water for about 3-5 minutes, or until the outer leaves are tender. Remove the leaves and set aside to cool.
- Step 3: In a large skillet, heat olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until softened, about 5 minutes.
- Step 4: Add the sliced sausage to the skillet and cook until browned, about 5-7 minutes.
- Step 5: Stir in the shrimp, Cajun seasoning, diced tomatoes, and cooked rice. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Season with salt and pepper to taste.
- Step 6: Take a cabbage leaf and spoon a generous amount of the shrimp and sausage mixture into the center. Fold in the sides and roll up to create a stuffed cabbage roll. Repeat with remaining leaves and filling.
- Step 7: Place the stuffed cabbage rolls seam side down in a baking dish.
- Step 8: Cover the dish with foil and bake in the preheated oven for 25-30 minutes.
- Step 9: Remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, simply pop them in the microwave or warm them in the oven.
