Ingredients
  

  • 16 ounces full-fat cream cheese softened
  • 1 cup salted butter softened
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 7 cups powdered sugar sifted

Method
 

  1. Step 1: Cream the Base: Grab your stand mixer with the whisk attachment, or just use your trusty hand mixer in a large bowl. Start by beating the softened cream cheese and softened butter together on medium-high speed. Let it go for about 1 to 1½ minutes, until it’s looking wonderfully smooth and well combined.
  2. Step 2: Add the Zest and Juice: Now, let’s bring in that sunshine! Add the fresh lemon zest, lemon juice, and vanilla extract. Give it a quick mix until everything is just blended in. We’re not looking for perfection here, just getting those flavors acquainted.
  3. Step 3: Sugar, Sugar!: Time to sweeten things up! Reduce your mixer speed to low. This is important so you don’t end up with a cloud of powdered sugar in your kitchen! Gradually add the sifted powdered sugar, about 1½ cups at a time. Make sure to mix well after each addition. Don't forget to scrape down the sides of the bowl with a spatula – that’s my little trick for getting every last bit incorporated.
  4. Step 4: Whip it Good: Once all the powdered sugar is in, turn the mixer speed back up to medium-high. Let it beat for about 2 minutes. You want it to get nice and fluffy, super smooth, and utterly delicious.
  5. Step 5: Chill Out (If Needed): If your kitchen is feeling a bit warm, your frosting might get a little soft. Just pop it covered into the refrigerator until it reaches your desired consistency for spreading or piping.

Notes

If your frosting is too thick, add a teaspoon of milk or lemon juice at a time. If it’s too thin, add a bit more sifted powdered sugar, a tablespoon at a time.
