Warm & Cheesy Broccoli Pepper Jack Dip

Ingredients
  

  • 16 oz steamable broccoli florets steamed and mashed slightly
  • 8 oz cream cheese softened
  • 2 cups shredded Pepper Jack cheese divided (1 ½ cups for the mix, ½ cup for topping)
  • ¾ cup shredded Sharp Cheddar cheese
  • ¾ cup sour cream
  • cup mayonnaise
  • 2 large cloves garlic minced
  • ½ cup finely chopped red pepper
  • salt and pepper to taste

Method
 

  1. Step 1: Get Your Oven Ready. Preheat your oven to 350°F (175°C). Make sure your cream cheese is softened.
  2. Step 2: Combine Everything (Almost!). In a large mixing bowl, combine the steamed and mashed broccoli, softened cream cheese, 1 ½ cups of the shredded Pepper Jack cheese, all the Sharp Cheddar, sour cream, mayonnaise, minced garlic, chopped red pepper, and a pinch of salt and pepper. Stir until well combined.
  3. Step 3: Into the Dish It Goes. Lightly spray a small casserole dish (an 8x8 inch or similar size) with cooking spray. Spoon the dip mixture into the dish and spread it out evenly.
  4. Step 4: Top with More Cheese! Sprinkle the remaining ½ cup of Pepper Jack cheese evenly over the top of the dip mixture.
  5. Step 5: Bake Until Bubbly. Bake for 30–35 minutes, or until the edges are bubbly and the top is golden brown.
  6. Step 6: Let it Rest (If You Can!). Let the dip cool slightly for 5-10 minutes before serving. Serve warm with your favorite dippers.

Notes

Ensure cream cheese is well softened for a smooth dip. Mash the broccoli well and drain thoroughly. Don't overbake. Store cooled leftovers covered in the refrigerator for 3-4 days.
