- Step 1: Preheat your oven to 400°F (200°C) and get that kitchen warmed up!
- Step 2: In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat. Add the baby potatoes and season with salt and pepper. Sauté for about 5-7 minutes until they start to brown.
- Step 3: Push the potatoes to one side of the skillet and add the chicken breasts. Season the chicken with salt, pepper, thyme, and rosemary.
- Step 4: In a small bowl, mix the remaining butter with minced garlic. Pour this delicious garlic butter mixture over the chicken and potatoes.
- Step 5: Now, place the skillet in your preheated oven and roast for 20 minutes.
- Step 6: After 20 minutes, toss in the green beans and mix everything together. Return the skillet to the oven for an additional 10-15 minutes, or until the chicken is fully cooked and the potatoes are tender.
- Step 7: Remove from the oven and let it rest for a few minutes. If you like, garnish with fresh parsley before serving.
