- Step 1: Preheat oven to 350°F (175°C). Grease a standard 8x8 inch or similar-sized baking dish.
- Step 2: In a large mixing bowl, combine the cottage cheese, eggs, almond flour or rolled oats, honey or maple syrup, vanilla extract, lemon zest, and baking powder. Mix until everything is happy and combined.
- Step 3: Gently fold the mixed fresh or frozen berries into the batter, distributing them nicely without squishing them.
- Step 4: Pour the mixture into the prepared baking dish and spread it out evenly.
- Step 5: Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center (away from a berry) comes out clean.
- Step 6: Remove from oven and let cool slightly for a few minutes to help it set up. Serve warm or at room temperature.
