- Step 1: First things first, preheat your oven to 350 degrees F (190 degrees C). Then, give a 9x13 inch baking pan a good grease. This is super important to prevent sticking!
- Step 2: Grab a medium mixing bowl and pour in 1 cup of the yellow cake mix. We're setting this aside for later to create our amazing crumb topping.
- Step 3: In a separate bowl, combine the remaining cake mix, the ½ cup of melted butter, and 1 egg. Mix it all up until it's well combined. Then, press this mixture evenly into the bottom of your prepared baking pan. This will form your delicious base!
- Step 4: In the same bowl you used for the crust (no need to wash it!), whisk together the pumpkin pie filling, the other 2 eggs, and the milk. Mix until it's nice and smooth. Gently pour this glorious pumpkin mixture evenly over the crust in the pan.
- Step 5: Now, let's get back to that reserved 1 cup of cake mix. Add the ¼ cup of white sugar and the 1 teaspoon of cinnamon to it. Then, take your ¼ cup of softened butter and cut it into the dry ingredients using a fork or your fingertips. You want to create a crumbly mixture. Sprinkle this all over the pumpkin layer in the pan.
- Step 6: Pop the pan into your preheated oven and bake for about 45 to 50 minutes. You'll know they're ready when a knife inserted into the center of the bars comes out clean. Let them cool completely before slicing and enjoying. Trust me, waiting is the hardest part, but it's worth it for the best texture!
Notes
Feel free to add a sprinkle of nutmeg or allspice to the crumb topping for an extra layer of fall flavor. For added crunch, try adding chopped pecans or walnuts to the topping mixture. These bars are also fantastic with a dollop of whipped cream or a drizzle of caramel sauce.
