  • 8 tbsp unsalted butter softened
  • cup fresh blackberries
  • 4 tsp honey
  • tsp kosher salt

Method
 

  1. Step 1: Ensure your unsalted butter is softened to room temperature. This is crucial for achieving the perfect whipped texture.
  2. Step 2: Place the softened butter into a mixing bowl. Add the fresh blackberries, the honey, and the kosher salt right into the bowl with the butter.
  3. Step 3: Using a hand mixer, start on a low speed to initially combine everything, then gradually increase the speed to medium or medium-high. Whip the mixture for about 2-4 minutes. As you whip, the berries will break down, and the butter will become smooth, fluffy, and have a gorgeous pinkish-purple hue.
  4. Step 4: Serve the whipped butter immediately on warm bread, pancakes, waffles, muffins, or store it in an airtight container in the refrigerator.

Notes

Butter temperature is non-negotiable; use only room temperature butter. Scrape down the sides of the bowl once or twice while whipping to ensure all ingredients are incorporated. Taste as you go and adjust the sweetness if needed, especially if your berries are tart. This butter is incredible on cornbread, scones, sweet potatoes, or even melted slightly over grilled peaches or chicken. For variations, try using other fresh berries like raspberries, swapping honey for maple syrup or sugar, adding a little lemon or orange zest, a splash of vanilla extract, or a pinch of cinnamon or nutmeg. A high-quality vegan butter substitute can be used for a vegan version. If storing in the refrigerator, allow it to come back to room temperature for 15-30 minutes before serving for the best texture. It keeps fresh in an airtight container in the fridge for 1-2 weeks. It is recommended to use fresh berries over frozen due to water content affecting texture.
