Sweet & Tangy Cranberry Honey Butter

Ingredients
  

  • 1 cup butter softened; unsalted recommended
  • 1/3 cup dried cranberries finely chopped
  • 1/4 cup honey
  • 2 tsp orange zest grated
  • 1/8 tsp kosher salt optional if using salted butter

Method
 

  1. Step 1: Ensure your butter is properly softened. If you forgot to leave it out, you can cut it into cubes and let it sit for 15-20 minutes, or gently microwave it for just a few seconds at a time (like 5-second bursts!) until it's soft but not melted.
  2. Step 2: Grab a medium-sized bowl. Add your softened butter to the bowl.
  3. Step 3: Next, toss in the finely chopped dried cranberries, the honey, the grated orange zest, and the pinch of kosher salt (if using).
  4. Step 4: Using a hand mixer, a stand mixer fitted with the paddle attachment, or even just a sturdy spatula or spoon and some elbow grease, beat or mix all the ingredients together until they are completely incorporated and the mixture looks smooth and creamy. Make sure you scrape down the sides of the bowl a couple of times to ensure everything is evenly mixed.

Notes

Storage: Store Cranberry Honey Butter in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months. To freeze, you can store in a container or roll into a log wrapped in plastic wrap and foil.
Tips: Ensure butter is properly softened for a smooth texture. Finely chop the dried cranberries to ensure they are well distributed and the butter is easy to spread. Taste and adjust the salt and honey as needed after mixing. This butter is best served at room temperature for easy spreading.
Variations & Substitutions: Feel free to experiment with different finely chopped dried fruits like cherries or apricots. Add a pinch of warm spices like cinnamon or nutmeg.
