Ingredients

  • 3 fresh peaches ripe but still a little firm, sliced into wedges
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 0.5 tsp cinnamon
  • 0.5 tsp vanilla extract
  • salt Pinch

Equipment

  • Large Skillet

Method

  1. Step 1: Wash and dry the peaches. Slice them into 8-12 wedges per peach, depending on size.
  2. Step 2: Heat a large skillet over medium heat. Add the butter and let it melt and get bubbly.
  3. Step 3: Gently lay the peach slices in the hot skillet, avoiding overcrowding (cook in batches if necessary). Immediately sprinkle the brown sugar, cinnamon, and a pinch of salt evenly over the peaches.
  4. Step 4: Cook for about 3-4 minutes, stirring or flipping occasionally, until the peaches soften slightly and develop a beautiful golden-brown glaze from the bubbling butter and sugar.
  5. Step 5: Remove the skillet from the heat. Stir in the vanilla extract (it might sizzle). Give it another quick stir to coat the peaches and let cook off heat for about 30 seconds for the vanilla aroma to bloom.
  6. Step 6: Remove the skillet from heat completely and serve the warm, glistening peaches immediately.

Notes

Use ripe but firm peaches to prevent them from turning to mush. Avoid overcrowding the pan to ensure caramelization rather than steaming. Medium heat is ideal to prevent burning the sugar. While best served warm, leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat gently in a skillet or microwave. Try serving over vanilla ice cream, Greek yogurt, pancakes, waffles, or oatmeal. Nectarines, sliced apples, or pears can be substituted for peaches. Granulated sugar, maple syrup, or honey can replace brown sugar. Add nutmeg, cardamom, or a splash of bourbon/rum for flavor variations. Sprinkle with toasted nuts or granola for crunch, or flaky sea salt for a salty-sweet touch.
