Ingredients
  

For the Sweet Chili Pineapple Sauce
  • 1 cup fresh pineapple finely chopped
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 tbsp sweet chili sauce
  • 1 tbsp soy sauce
  • 1 clove garlic minced
  • 1 tsp cornstarch
  • 1 tbsp water for cornstarch slurry
  • Salt to taste

Method
 

  1. Step 1: In a saucepan, combine the chopped pineapple, sugar, rice vinegar, 1/4 cup water, sweet chili sauce, soy sauce, and minced garlic.
  2. Step 2: Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
  3. Step 3: Reduce the heat and let it simmer for about 10 minutes, until the pineapple is softened and the flavors meld together.
  4. Step 4: In a small bowl, mix the cornstarch with 1 tablespoon of water to create a slurry.
  5. Step 5: Add the cornstarch slurry to the saucepan and stir well to combine.
  6. Step 6: Continue to simmer for an additional 2-3 minutes, or until the sauce has thickened to your desired consistency.
  7. Step 7: Season with salt to taste, then remove from heat and let cool before serving.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze in small portions for longer storage.
