Ingredients

Main Ingredients
  • 1 medium fresh pineapple peeled, cored, and diced into bite-sized pieces
  • 1.5 cups granulated sugar
  • 0.75 cup apple cider vinegar
  • 1.5 tsp red pepper flakes adjust based on spice preference
  • 0.5 tsp ground ginger adds warm, subtle spice
  • fresh mint leaves optional, for garnish and fresh flavor

Equipment

  • Medium Saucepan
  • Sterilized Jars

Method

  1. Step 1: Peel, core, and dice the pineapple into small, even chunks to ensure even cooking and great texture.
  2. Step 2: In a medium saucepan, combine granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger. Heat over medium, stirring until sugar dissolves and mixture comes to a gentle boil.
  3. Step 3: Add the diced pineapple to the syrup. Reduce heat to low and simmer gently for about 10 minutes, stirring occasionally, until pineapple softens but retains chunks.
  4. Step 4: Remove saucepan from heat and let the mixture cool for about 30 minutes. Stir in fresh mint leaves if using for a bright flavor.
  5. Step 5: Carefully transfer the pineapple cowboy candy into sterilized jars. Seal tightly and refrigerate. Let sit for at least 24 hours before enjoying to allow flavors to meld.

Notes

Use white vinegar as a sharper substitute for apple cider vinegar or brown sugar for deeper sweetness. Add diced jalapeƱos or fresh ginger for extra heat and zing. Store refrigerated and consume within two weeks for best flavor and texture.
