  • 2 cups granulated sugar
  • 0.25 cup corn syrup
  • 0.5 cup water
  • 1 tbsp butter
  • 1 packet unflavored gelatin
  • 0.25 cup cold water for blooming gelatin
  • 1 tsp orange extract optional
  • Powdered sugar for dusting (optional)

Method
 

  1. Step 1: Zest both oranges, avoiding the white pith, and set aside. Juice the oranges until you have about 3/4 cup. Strain if desired and set aside.
  2. Step 2: In a medium saucepan, combine the orange juice, 1/2 cup water, granulated sugar, and corn syrup. Stir over medium heat until the sugar dissolves completely. Bring the mixture to a gentle simmer.
  3. Step 3: Let the syrup simmer for about 10 minutes, stirring occasionally. While it simmers, sprinkle the unflavored gelatin powder evenly over 1/4 cup cold water in a small bowl. Let it sit for about 5 minutes to bloom.
  4. Step 4: Add the bloomed gelatin to the hot syrup in the saucepan. Stir gently until the gelatin is completely dissolved. Stir in the butter, orange zest, and optional orange extract and pinch of salt. Continue to cook and stir constantly for another 5 minutes, until the mixture thickens slightly and resembles runny honey.
  5. Step 5: Remove the saucepan from the heat and let the candy mixture cool at room temperature for about 1 to 2 hours. While it cools, lightly grease an 8x8-inch square dish or prepare silicone candy molds.
  6. Step 6: Carefully pour the cooled candy mixture into your prepared dish or molds. Let it sit at room temperature for another 1 to 2 hours to start setting, then transfer to the refrigerator for 4 to 6 hours or until completely firm. Once set, cut into bite-sized pieces (if using a dish) or pop from molds. Optionally, dust each piece generously with powdered sugar before serving.

Notes

For variety, try using different citrus juices/zests (lemon, lime, grapefruit). Add a drop or two of orange food coloring for a more vibrant color. Roll in coarse granulated sugar instead of powdered sugar for a different texture. A tiny drop of vanilla, lemon, or almond extract, or a pinch of ground ginger or cardamom can add interesting twists. Use fresh oranges for the best flavor. Ensure your pan is well-greased. Patience is key for the cooling and setting steps for the correct chewy texture. Store in an airtight container at room temperature for 1-2 weeks, or in the refrigerator if your home is warm/humid.
