Ingredients

  • 16.5 oz tube sugar cookie dough refrigerated
  • 1 egg
  • 1 tbsp vanilla extract
  • 8 oz cream cheese room temperature
  • sprinkles optional, for topping
  • powdered sugar optional, for dusting

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Lightly grease or line an 8x8-inch baking pan with parchment paper.
  2. Step 2: Press about two-thirds of the sugar cookie dough evenly into the bottom of the prepared pan to form the crust.
  3. Step 3: In a medium bowl, beat the room temperature cream cheese until smooth. Beat in the egg and vanilla extract until well combined and creamy.
  4. Step 4: Gently pour the cream cheese mixture over the cookie dough crust and spread evenly.
  5. Step 5: Break the remaining sugar cookie dough into small pieces and scatter them over the cream cheese layer.
  6. Step 6: If desired, sprinkle colorful sprinkles over the top.
  7. Step 7: Bake for 25–30 minutes, or until the top is golden and the center is set.
  8. Step 8: Let the bars cool completely in the pan.
  9. Step 9: Chill the bars in the refrigerator for at least 1 hour to set.
  10. Step 10: Dust with powdered sugar before slicing and serving, if desired.

Notes

For the best texture, chill the bars for at least 1 hour before slicing. They can be made a day in advance and stored in the refrigerator for up to 3-4 days. Check packaging for nut-free status if needed.
