  • 2 cups 2 cups cooked shredded chicken rotisserie chicken is a lifesaver here!

  • 1 cup diced bell peppers use any color you like, or a mix for pretty presentation!
  • 1 cup creamy cheese sour cream or cream cheese both work beautifully for that signature creaminess
  • 1 tablespoon chili powder adjust to your spice preference
  • 1 teaspoon garlic powder
  • 2 cups cooked rice white or brown, whatever you have on hand!
  • 1 cup shredded cheese cheddar, Monterey Jack, or a Mexican blend are fantastic
  • 1/2 cup chopped green onions for that fresh, oniony bite!

  2. Step 2: Grab a large mixing bowl. Add your cooked shredded chicken, corn kernels, diced bell peppers, cooked rice, and your creamy cheese (sour cream or cream cheese). Give it a good stir until everything is nicely combined. It’s starting to smell amazing already!
  3. Step 3: Now, let’s add the flavor! Sprinkle in the chili powder, garlic powder, salt, and pepper. Stir it all up again, making sure those spices are evenly distributed throughout the mixture. This is where that street corn magic really starts to happen.
  4. Step 4: Lightly grease a 9x13 inch casserole dish. Pour your delicious mixture into the dish and spread it out evenly.
