Ingredients

  • 16 ounces cream cheese softened to room temperature
  • 1 cup salted butter softened to room temperature
  • 1 teaspoon vanilla extract
  • 6 cups confectioners' powdered sugar also known as icing sugar or 10x sugar
  • 2.5 cups freeze-dried strawberries pulsed to a powder

Equipment

  • Stand Mixer or Hand Mixer
  • bowl
  • Spatula

Method

  1. Step 1: Grab your stand mixer or a hand mixer. Add the softened cream cheese and softened butter to the bowl. Beat them together on medium speed until they're light and fluffy. This usually takes about 4 minutes. You want to make sure there are no lumps!
  2. Step 2: Pour in the vanilla extract. Beat it in for about another minute until everything is nicely combined. The kitchen is already starting to smell amazing, right?
  3. Step 3: Now, it's time for the powdered sugar. Start adding it a little at a time, mixing on low speed until each addition is incorporated. Gradually increase the speed to medium-high as you add the rest of the sugar. This prevents a sugar cloud explosion in your kitchen!
  4. Step 4: Time for the star of the show! Add your finely pulsed freeze-dried strawberries. Beat everything together until the frosting is beautifully blended and you have that gorgeous pink hue and wonderful strawberry flavor.
  5. Step 5: For the best piping consistency, pop the frosting in the refrigerator for about 30 minutes. This helps it firm up just enough to hold its shape on your cakes and cupcakes. If you're in a hurry, you can use it right away, but it might be a bit softer.
