  • 4 breasts boneless, skinless chicken breasts Make sure they're roughly the same size
  • 1/2 cup hot honey If you don't have hot honey, mix regular honey with a pinch more red pepper flakes
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 tsp crushed red pepper flakes optional, adjust based on spice preference
  • 1/2 cup crumbled feta cheese

Method
 

  1. Step 1: Prep Your Oven and Dish. Preheat oven to 400°F (200°C). Grease a baking dish, such as a 9x13 inch one, to prevent sticking.

  3. Step 3: Coat the Chicken. Place chicken breasts in the greased baking dish. Pour the hot honey mixture over the chicken, using a spoon or brush to ensure each piece is beautifully coated.
  4. Step 4: Bake Until Cooked Through. Bake uncovered in the preheated oven for about 25-30 minutes, or until an internal temperature of 165°F (74°C) is reached in the thickest part of the chicken. Cooking time may vary based on chicken thickness.
  5. Step 5: Add the Feta Finish. In the last 5 minutes of baking, carefully sprinkle the crumbled feta cheese generously over the tops of the chicken breasts. Return to the oven for the final few minutes until the feta is soft and melted, possibly slightly golden.
  6. Step 6: Rest and Serve. Remove the dish from the oven and let the chicken rest in the dish for about 5 minutes before slicing or serving. This allows juices to redistribute, ensuring juicy chicken. Enjoy!

For less heat, use regular honey and omit or reduce red pepper flakes.
