Method
- Step 1: Preheat your oven to 425°F (220°C) for roasting the potatoes.
- Step 2: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, paprika, salt, and black pepper until well coated.
- Step 3: Spread the seasoned potatoes out in a single layer on a baking sheet and roast for 20-25 minutes until golden brown and tender.
- Step 4: While the potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
- Step 5: Add the steak bites to the skillet and cook for about 3-4 minutes until browned and cooked to your desired doneness. Remove from skillet and set aside.
- Step 6: In the same skillet, add the shrimp and cook for 2-3 minutes until pink and opaque.
- Step 7: Return the steak to the skillet, mixing it with the shrimp and cook for an additional minute.
- Step 8: Serve alongside the roasted potatoes and garnish with freshly chopped parsley.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm in a skillet or microwave.
