  • 3 tbsp dark chocolate melted
  • 4 tsp white chocolate melted
  • 1/2 cup vanilla ice cream

Method
 

  1. Step 1: Prep your cookie canvases: Grab four of your chocolate chip cookies and lay them flat. Cover the flat (undecorated) side of each with your melted dark chocolate using a small offset spatula or the back of a spoon. Gently tap on your counter to smooth out the chocolate and remove air bubbles.
  2. Step 2: Bring on the ghosts: While the dark chocolate is still wet, spoon your melted white chocolate into a small piping bag (or a Ziploc bag with a tiny corner snipped off). Pipe a ghost shape onto the wet dark chocolate. A light tap of the cookie on the counter can help smooth out the white chocolate.
  3. Step 3: Give them some personality: Using a tiny bit of your leftover melted dark chocolate (with a very fine piping tip or a toothpick), create two little dots for eyes and a small, screaming "O" shape for a mouth on each ghost. Gently tapping or shaking the cookie can help the chocolate settle into place.
  4. Step 4: Let them chill out: Allow the chocolate designs to cool and harden completely. This takes about an hour at room temperature, or 15-20 minutes in the fridge to speed things up. You want them solid before proceeding.
  5. Step 5: Assemble your sandwiches: Take the remaining four undecorated cookies. Scoop about a tablespoon or two of vanilla ice cream onto the flat side of each. Take one of your decorated ghost cookies and place it on top, chocolate-side up. Gently press down to flatten the ice cream into an even layer, creating your sandwich.
