  • 1 lb ground beef or ground chicken or turkey
  • 2 cups fresh spinach chopped
  • 2 cloves garlic minced
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 8 oz mozzarella cheese cubed
  • olive oil or cooking spray for greasing the baking sheet

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a large mixing bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, egg, salt, black pepper, and Italian seasoning. Mix gently until just combined.
  3. Step 3: Take a portion of the meat mixture, flatten it in your palm, place a cube of mozzarella in the center, then mold the meat around it to form a tight ball.
  4. Step 4: Line a baking sheet with parchment paper or lightly grease it with olive oil or cooking spray. Arrange the meatballs evenly spaced on the tray.
  5. Step 5: Bake for 20-25 minutes, until cooked through and golden brown. The cheese inside should be melted and the juices run clear.
  6. Step 6: Serve hot with your favorite sides like salad, garlic bread, or mashed potatoes.

Notes

You can pan-fry the meatballs for a crispy crust instead of baking. Freeze assembled raw meatballs on a baking sheet, then transfer to a bag for easy cooking later. Reheat leftovers in the oven or microwave. Swap breadcrumbs for gluten-free options if needed.
