For the Spicy Coconut Pineapple Glaze
  • 1 cup pineapple juice fresh or canned
  • 1/2 cup coconut milk full-fat
  • 3 tbsp honey or brown sugar
  • 1-2 tsp sriracha or chili garlic sauce adjust to taste
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp fresh ginger grated
  • 1 tsp cornstarch slurry 1 tsp cornstarch mixed with 1 tbsp water

Method
 

  1. Step 1: In a small saucepan over medium heat, combine pineapple juice, coconut milk, honey, sriracha, soy sauce, lime juice, and grated ginger.
  2. Step 2: Stir the mixture and bring it to a gentle simmer, stirring frequently to prevent sticking and to blend flavors.
  3. Step 3: Slowly whisk in the cornstarch slurry. Continue stirring for 2–3 minutes until the glaze thickens and becomes glossy.
  4. Step 4: Remove from heat and let the glaze cool slightly before using. Use as a brush-on glaze or drizzle to enhance your favorite dishes.

Notes

This glaze can be made vegan by substituting honey with maple syrup or agave nectar. Store in the refrigerator up to one week. Warm gently before use. Try adding fresh herbs like cilantro or basil for extra flavor.
