Ingredients

For the Cajun Shrimp Noodle Bowl
  • 1 lb large shrimp peeled and deveined
  • 8 oz rice noodles
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 unit bell pepper sliced
  • 1 unit onion sliced
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Equipment

  • Large Skillet
  • Pot

Method

  1. Step 1: Start by cooking the rice noodles according to the package instructions. Once done, drain them and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat.
  3. Step 3: Add the sliced onion and bell pepper to the skillet. Sauté until they soften, about 5 minutes.
  4. Step 4: Stir in the minced garlic and cook for an additional minute, letting that amazing aroma fill your kitchen.
  5. Step 5: Add the shrimp to the skillet and sprinkle with Cajun seasoning. Cook until the shrimp turn pink and opaque, which should take about 3-4 minutes.
  6. Step 6: Pour in the vegetable broth, soy sauce, and lemon juice. Stir to combine and let it simmer for about 2 minutes.
  7. Step 7: Add the cooked rice noodles to the skillet, tossing to coat them in that savory sauce. Season with salt and pepper to taste.
  8. Step 8: Serve hot, garnished with chopped green onions for a fresh touch.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a splash of broth or water to help rehydrate the noodles and prevent them from becoming too dry.
