- Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are tender, about 5-7 minutes.
- Step 2: Add the sliced smoked sausage to the pot and cook for an additional 5 minutes, stirring occasionally.
- Step 3: Stir in the diced tomatoes, chicken broth, Worcestershire sauce, hot sauce (if using), Creole seasoning, thyme, paprika, salt, and pepper. Bring the mixture to a boil.
- Step 4: Reduce the heat to low and let the stew simmer for 20-25 minutes, allowing the flavors to meld beautifully.
- Step 5: If using okra, add it to the pot and cook for another 5 minutes.
- Step 6: Finally, stir in the shrimp and cook until they are pink and cooked through, about 3-5 minutes.
- Step 7: Serve the stew hot, garnished with chopped green onions and fresh parsley for a lovely touch.
