  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 1 bell pepper bell pepper chopped (any color)
  • 2 cloves garlic minced
  • 1 cup diced tomatoes canned or fresh
  • 1 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Cajun seasoning
  • Salt and pepper
  • 2 green onions green onions sliced (for garnish)
  • Cooked rice

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.
  2. Step 2: Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Step 3: Add the diced tomatoes, chicken broth, Worcestershire sauce, Cajun seasoning, salt, and pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
  4. Step 4: Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-5 minutes.
  5. Step 5: Serve the smothered shrimp and peppers over cooked rice, garnished with sliced green onions.
