Method
 

  1. Step 1: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Step 2: In a mixing bowl, combine cottage cheese, eggs, minced garlic, and olive oil. Blend until smooth and well combined using a hand mixer or blender.
  3. Step 3: Gently fold in almond flour, baking powder, dried oregano, salt, and shredded mozzarella cheese until a soft, sticky dough forms.
  4. Step 4: Divide dough into 8 equal portions. Shape each into a roll and place evenly on the prepared baking sheet.
  5. Step 5: Bake rolls for 20–25 minutes until golden brown and aromatic. Let cool slightly before serving.

Notes

Swaps: try cheddar, parmesan, or gouda instead of mozzarella. Herbs: rosemary, thyme, or basil for different flavors. Add extra garlic or garlic powder for more aroma. For nut-free, substitute almond flour with sunflower seed or coconut flour, adjusting liquids accordingly. Store in airtight container up to 2 days at room temp, 4 days refrigerated, or freeze up to 3 months.
