Ingredients

For the Beef Curry
  • 2 lbs beef chuck cut into 1-inch cubes
  • 4 large onions thinly sliced
  • 4 cloves garlic minced
  • 2 inches ginger grated
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp turmeric
  • 1 tsp cayenne pepper adjust to taste
  • 1 can diced tomatoes (14 oz)
  • 2 cups beef broth
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Equipment

  • Large Heavy-Bottomed Pot

Method

  1. Step 1: In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 30-40 minutes. This step is crucial for developing rich flavors!
  2. Step 2: Once the onions are beautifully browned, remove half of them and set aside for garnish.
  3. Step 3: To the remaining onions in the pot, add the minced garlic and grated ginger. Cook for an additional 2-3 minutes until fragrant. Trust me, your kitchen will smell heavenly!
  4. Step 4: Stir in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another minute to toast the spices, releasing their essential oils.
  5. Step 5: Add the beef cubes to the pot, stirring to coat them in the spice mixture. Cook until the beef is browned on all sides. This helps seal in the juices and flavor!
  6. Step 6: Pour in the diced tomatoes, beef broth, and coconut milk. Bring the mixture to a simmer, then reduce the heat to low. Cover and let the curry simmer gently for 2-3 hours, or until the beef is tender. Letting it simmer is the key to tender, flavorful beef.
  7. Step 7: Season with salt to taste. Serve the curry hot, garnished with the reserved caramelized onions and fresh cilantro. Enjoy every delicious bite!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 4 days. If you want to keep it longer, you can freeze the curry for up to 3 months.
