- Step 1: Heat the olive oil in a large, heavy-bottomed pot over medium heat.
- Step 2: Season the chicken thighs with salt and pepper, then add them to the pot, skin-side down. Sear until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.
- Step 3: In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes.
- Step 4: Stir in the cumin, coriander, cinnamon, turmeric, paprika, and cayenne pepper (if using). Cook for about 1 minute until fragrant.
- Step 5: Return the chicken to the pot and pour in the chicken broth. Add the preserved lemon and olives.
- Step 6: Bring the mixture to a simmer, cover, and reduce the heat to low. Cook for 45-60 minutes, or until the chicken is tender and fully cooked.
- Step 7: Adjust seasoning with salt and pepper as needed.
- Step 8: Garnish with fresh cilantro or parsley before serving.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. This dish also freezes well; cool completely before transferring to a freezer-safe container.
