For the Shrimp Filling
  • 12 large pasta shells
  • 1 lb shrimp peeled and deveined
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup Alfredo sauce store-bought or homemade
  • 2 cloves garlic minced
  • 1 tbsp olive oil for sautéing
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. Step 3: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Step 4: Add the shrimp to the skillet, season with Italian seasoning, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes. Remove from heat.
  5. Step 5: In a mixing bowl, combine cooked shrimp, ricotta cheese, half of the mozzarella, and half of the Parmesan. Mix well until everything is combined.
  6. Step 6: Stuff each pasta shell with the shrimp and cheese mixture and place them in a baking dish.
  7. Step 7: Pour the Alfredo sauce over the stuffed shells, then sprinkle with the remaining mozzarella and Parmesan cheese.
  8. Step 8: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Step 9: Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, simply place them back in the oven until heated through, or microwave for a quicker option.
