Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup beef broth
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet over medium heat, cook the ground beef until browned. Add the chopped onion and minced garlic, and cook for another 3–5 minutes until tender. Drain off any excess grease.
  3. Step 3: Stir in the frozen peas and carrots, cream of mushroom soup, and beef broth. Season with salt and pepper. Simmer until heated through.
  4. Step 4: Grease a 9x13-inch baking dish. Pour the beef mixture into the dish and spread evenly. Sprinkle the shredded cheddar cheese over the top.
  5. Step 5: Arrange the frozen tater tots in a single, even layer on top of the cheese.
  6. Step 6: Bake for 30–35 minutes, or until the tater tots are crispy and golden brown, and the cheese is melted and bubbly.
  7. Step 7: Garnish with fresh chopped parsley, if desired. Serve hot.

Notes

You can assemble the casserole (up to the tater tot layer) a day in advance. Cover it tightly and keep it in the refrigerator. You might need to add a few extra minutes to the baking time if baking from cold.
