Ingredients

For the Pumpkin Mixture
  • 4 large eggs
  • 1 cup milk whole milk or 2% works wonderfully
  • 1/2 cup canned pumpkin puree pure pumpkin puree, not pumpkin pie filling
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
For Cooking and Serving
  • 8 slices thick-cut bread e.g., brioche, challah
  • butter or oil for cooking
  • powdered sugar optional, for dusting
  • maple syrup for serving
  • whipped cream optional

Equipment

  • Large Mixing Bowl
  • Whisk
  • Skillet or Griddle
  • Spatula
  • Measuring cups and spoons
  • Airtight container (for storing)

Method

  1. Step 1: Grab a large mixing bowl. Whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until nicely combined and smooth.
  2. Step 2: Heat a skillet or griddle over medium heat and add butter or oil. Gently dip bread slices into the pumpkin mixture, letting each side soak for a few seconds. Let excess drip off.
  3. Step 3: Carefully place the dipped bread onto the hot skillet. Cook for about 2 to 3 minutes per side, until golden-brown and cooked through. Adjust heat as needed.
  4. Step 4: Serve warm, dusted with powdered sugar (optional), and drizzled with maple syrup and a dollop of whipped cream (optional).

Notes

Slightly stale bread works best as it's firmer. You can prepare the custard mixture a day in advance and store it in the refrigerator. Cut bread into uniform slices for consistent cooking.
