Ingredients
  

For the Cookie Dough
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup chocolate chips
For the Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
Optional Topping
  • chocolate glaze or melted chocolate for drizzling

Method
 

  1. Step 1: Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
  2. Step 2: In a medium bowl, whisk together flour, baking soda, and salt.
  3. Step 3: In a larger bowl, beat together softened butter, brown sugar, and granulated sugar until fluffy.
  4. Step 4: Add egg and vanilla extract to the creamed butter and sugar mixture. Beat until smooth and combined.
  5. Step 5: Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in chocolate chips.
  6. Step 6: In a separate bowl, beat softened cream cheese with sugar, egg yolk, and vanilla until smooth and creamy.
  7. Step 7: Roll tablespoon-sized pieces of cookie dough into balls. Flatten them slightly. Layer the cookie dough balls and dollops of cheesecake filling in the prepared loaf pan, alternating until all ingredients are used.
  8. Step 8: Bake for 40–45 minutes, or until the top is golden brown and the center is set.
  9. Step 9: Let the loaf cool in the pan for 15 minutes, then carefully remove it and let it cool completely on a wire rack.
  10. Step 10: Drizzle with melted chocolate or chocolate glaze, if desired. Slice and serve.

Notes

For a different flavor, try adding chopped nuts like walnuts or pecans, or M&M's to the cookie dough. You can also add lemon zest or almond extract to the cheesecake filling. For spice, add cinnamon or nutmeg to the cookie dough. Toppings can include caramel drizzle, powdered sugar, or sprinkles.
