Ingredients
  

For the Blueberry Layer
  • 2 cups fresh blueberries bursting with flavor
  • 1 cup granulated sugar divided
  • 1 tbsp lemon juice to brighten flavors
For the Cream Cheese Filling
  • 1 package cream cheese softened, 8 oz
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
For the Crust
  • 1 cup graham cracker crumbs provides a crunchy crust
  • 4 tbsp unsalted butter melted

Method
 

  1. Step 1: In a medium bowl, combine the fresh blueberries, 1/2 cup of sugar, and lemon juice. Gently toss to coat and set aside.
  2. Step 2: In a large mixing bowl, beat the softened cream cheese with the remaining 1/2 cup of sugar until smooth and creamy.
  3. Step 3: In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gradually fold the whipped cream into the cream cheese mixture until well combined.
  4. Step 4: In another bowl, mix the graham cracker crumbs with the melted butter until evenly coated.
  5. Step 5: In a 9x9 inch dish, press half of the graham cracker mixture into the bottom to form a crust.
  6. Step 6: Spread half of the cream cheese mixture over the crust, followed by half of the blueberry mixture.
  7. Step 7: Repeat the layers with the remaining graham cracker mixture, cream cheese mixture, and blueberries.
  8. Step 8: Refrigerate for at least 4 hours, or until set. Serve chilled and enjoy!

Notes

This dessert can be stored in the refrigerator for up to 3 days. Cover tightly with plastic wrap or aluminum foil to keep it fresh.
