- Step 1: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Step 2: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
- Step 3: Stir in the diced potatoes, bell pepper, diced tomatoes (with their juice), olives, capers (if using), cumin, paprika, salt, and pepper. Mix well to combine.
- Step 4: Cover the skillet and reduce the heat to low. Allow the mixture to simmer for about 25-30 minutes, or until the potatoes are tender, stirring occasionally.
- Step 5: Once the potatoes are cooked, taste and adjust the seasoning if necessary.
- Step 6: Serve hot, garnished with fresh cilantro if desired.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you want to keep it longer, you can freeze the dish for up to 3 months.
