Ingredients
  

For the Picadillo
  • 1 lb ground beef A staple protein that adds heartiness to the dish.
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper bell pepper chopped
  • 14 oz diced tomatoes 1 can
  • 0.5 cup green olives sliced
  • 1 tbsp capers optional
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper
  • 2 tbsp olive oil for sautéing
  • Fresh cilantro for garnish

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Step 2: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  3. Step 3: Stir in the diced potatoes, bell pepper, diced tomatoes (with their juice), olives, capers (if using), cumin, paprika, salt, and pepper. Mix well to combine.
  4. Step 4: Cover the skillet and reduce the heat to low. Allow the mixture to simmer for about 25-30 minutes, or until the potatoes are tender, stirring occasionally.
  5. Step 5: Once the potatoes are cooked, taste and adjust the seasoning if necessary.
  6. Step 6: Serve hot, garnished with fresh cilantro if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you want to keep it longer, you can freeze the dish for up to 3 months.
