  • 2 Tbsp avocado oil, grass-fed butter, unrefined coconut oil, or olive oil Your choice for searing! I love using avocado oil for its high smoke point.

Method
 

  1. Step 1: First things first, preheat your oven to 375°F (190°C). This is our happy temperature for baking chicken to juicy perfection.
  2. Step 2: Take your chicken breasts and give them a good all-over sprinkle with oregano (or Italian seasoning), garlic powder, sea salt, and pepper. Make sure to season both sides – flavor starts here!
  3. Step 3: Now, for the fun part! Carefully cut a pocket lengthwise into each chicken breast. Think of it like making a little sleeping bag for the filling, but be careful not to cut all the way through.
  4. Step 4: Time to load them up! Evenly distribute the cheese slices, jalapeno pieces, and those lightly smashed blackberries into the pockets of each chicken breast. You want a good mix of everything in each bite.
  5. Step 5: If your pockets are a bit gappy or you're worried about the filling escaping, a toothpick or two can be your best friend. Just pop them in to hold everything snugly in place.
  6. Step 6: Grab a large, oven-safe skillet. Heat your chosen oil or butter over medium heat. Once it's shimmering, carefully place the stuffed chicken breasts into the skillet. Sear them for about 4 minutes per side, until they’re beautifully golden brown. This step adds an amazing depth of flavor.
  7. Step 7: Gently pour the chicken bone broth into the skillet around the chicken. This helps keep everything moist and adds a lovely savory base.
  8. Step 8: Now, carefully transfer that whole skillet into your preheated oven.
  9. Step 9: Bake for about 12-15 minutes. The best way to know for sure it's done is to use a meat thermometer. You're looking for an internal temperature of 165°F (73.9°C) in the thickest part of the chicken.
