Ingredients
  

For the Salad
  • 1 cup quinoa Packed with protein and gluten-free!
  • 2 cups water Essential for cooking the quinoa.
  • 1 cup cherry tomatoes halved
  • 1 count cucumber diced
  • 1 count bell pepper diced
  • 1/4 count red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil A healthy fat that brings everything together.
  • 2 tbsp lemon juice Adds a zesty kick.
  • to taste Salt and pepper Essential for enhancing all the flavors.

Method
 

  1. Step 1: Start by rinsing the quinoa under cold water. This helps remove any bitterness.
  2. Step 2: In a medium saucepan, combine the rinsed quinoa and 2 cups of water, and bring to a boil.
  3. Step 3: Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the water is fully absorbed.
  4. Step 4: Remove from heat and let it sit covered for an additional 5 minutes. Fluff it with a fork to separate the grains.
  5. Step 5: While the quinoa is cooking, grab a large bowl and combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
  6. Step 6: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  7. Step 7: Add the cooked quinoa to the vegetable mixture and pour the dressing over it. Toss gently to combine everything.
  8. Step 8: You can serve it immediately, or let it chill in the refrigerator for up to an hour for enhanced flavor. Enjoy!

Notes

This Mediterranean Bite can be stored in an airtight container in the refrigerator for up to 3 days. Just be sure to give it a gentle toss before serving again.
