Ingredients
  

For the Mango Chili Chicken Wings
  • 2 lbs chicken wings tips removed
  • 0.5 tsp salt for seasoning wings
  • 0.25 tsp black pepper for seasoning wings
  • 1 tbsp vegetable oil to toss wings
  • 1 cup ripe mango diced or 1/2 cup puree
  • 2 cloves garlic minced, for sauce
  • chili flakes or fresh chili adjust to taste
  • 2 tbsp honey or maple syrup for sweetness
  • 1 tbsp lime juice fresh preferred
  • fresh cilantro or green onions for garnish
  • 0.5 tsp salt for sauce

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C) or heat grill to medium-high.
  2. Step 2: Pat chicken wings dry with paper towels. Season evenly with ½ tsp salt and ¼ tsp black pepper. Toss wings with 1 tbsp vegetable oil to coat.
  3. Step 3: Cook the wings: For baking, lay wings in a single layer on a baking sheet and bake for 40–45 minutes, flipping halfway through. For grilling, cook wings 20–25 minutes, turning occasionally until cooked through and crisp.
  4. Step 4: While wings cook, make the mango chili sauce. In a saucepan over medium heat, combine diced mango, minced garlic, chili flakes or fresh chili, honey or maple syrup, lime juice, and ½ tsp salt. Cook for 5–7 minutes until mango softens and sauce is fragrant. Blend if desired for a smooth sauce.
  5. Step 5: Toss cooked wings in the mango chili sauce until evenly coated.
  6. Step 6: Garnish with fresh cilantro or sliced green onions. Serve immediately and enjoy!

Notes

Make the sauce ahead and reheat gently before tossing with wings. For a smoky flavor, try smoked paprika or chipotle powder in the sauce. Leftovers keep up to 3 days in the fridge; freeze cooked wings without sauce up to 2 months.
