  • 50 g sugar Just the right amount to sweeten the mixture.
  • 1 tsp vanilla extract A must for that warm, comforting flavor.
  • 100 ml mandarin juice Fresh and zesty, it's the star of this recipe!
  • 3 sheets gelatin These help the bombs hold their shape perfectly.
  • 200 g mirror glaze The shiny finish that makes these bombs pop!
  • edible gold leaf A touch of luxury for decoration.

Equipment

  • Saucepan
  • Silicone Molds
  • Wire rack

Method

  1. Step 1: In a saucepan, heat the heavy cream and sugar over medium heat. Stir until the sugar dissolves, then remove from heat.
  2. Step 2: Add the white chocolate to the saucepan and stir until melted and smooth.
  3. Step 3: Pour in the vanilla extract and mandarin juice, mixing well to combine all the flavors.
  4. Step 4: Soak the gelatin sheets in cold water for about 5 minutes until they soften. Squeeze out excess water and add the gelatin to the warm chocolate mixture, stirring until fully dissolved.
  5. Step 5: Pour the mixture into silicone molds and refrigerate for at least 4 hours, or until set.
  6. Step 6: Once set, carefully remove the bombs from the molds.
  7. Step 7: Heat the mirror glaze according to the package instructions until it has a smooth, pourable consistency.
  8. Step 8: Place the chocolate bombs on a wire rack and pour the mirror glaze over them, ensuring they are fully coated.
  9. Step 9: Allow any excess glaze to drip off, then transfer the bombs to a serving platter.
  10. Step 10: Decorate with edible gold leaf as desired before serving. Enjoy your creations!

Notes

Store any leftover bombs in an airtight container in the refrigerator for up to 5 days. They are best enjoyed fresh, but they will keep well if you need to make them ahead of time!
