Method
 

  1. Step 1: Preheat oven to 350°F (175°C).
  2. Step 2: Place butter in a 9×9-inch baking dish and melt in oven for 3-4 minutes.
  3. Step 3: In a mixing bowl, whisk together flour, baking powder, salt, and sugar until combined.
  4. Step 4: Add buttermilk, vanilla extract, and lemon extract to dry ingredients. Stir gently until just combined; do not overmix.
  5. Step 5: Pour batter evenly over melted butter in baking dish. Do not stir.
  6. Step 6: Drop spoonfuls of lemon pie filling evenly over batter; filling will sink partially during baking.
  7. Step 7: Bake for 45-55 minutes until edges are golden and center is set.
