Ingredients
  

Sweet Potato Lasagna Components
  • 3 large sweet potatoes peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts chopped
  • 1/4 cup fresh herbs such as basil, parsley, or thyme, finely chopped
  • 1 cup ricotta cheese
  • 1/2 cup cranberry sauce
  • 2 tbsp honey
  • Salt and pepper
  • Olive oil

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: In a bowl, mix the ricotta cheese with the chopped herbs, salt, and pepper. Set aside.
  3. Step 3: In another bowl, combine the cranberry sauce and honey. Set aside.
  4. Step 4: In a baking dish, layer the sliced sweet potatoes, spreading a layer of the ricotta mixture on top, followed by a sprinkle of feta and walnuts. Repeat the layers until all ingredients are used, finishing with a layer of sweet potatoes on top.
  5. Step 5: Drizzle olive oil over the top layer and cover the dish with aluminum foil.
  6. Step 6: Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden.
  7. Step 7: Once done, remove from the oven and let it cool slightly before serving.
  8. Step 8: Drizzle the cranberry honey glaze over the top before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven for the best results, or you can microwave it if you're in a hurry.
