- Step 1: Prepare the marinade by whisking together soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and red pepper flakes if using until sugar dissolves.
- Step 2: Add the thinly sliced beef sirloin to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Step 3: While beef marinates, make the dipping sauce by combining soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger in a small saucepan over medium heat. Stir and bring to a simmer.
- Step 4: Mix cornstarch with water in a small bowl, then slowly add to the simmering sauce while stirring continuously. Cook for 1–2 minutes until thickened. Remove from heat and cool slightly.
- Step 5: Heat a grill pan or skillet over medium-high heat. Remove beef from marinade, letting excess drip off, discarding leftover marinade.
- Step 6: Cook beef bites in batches for 2–3 minutes per side until cooked to desired doneness but still juicy.
- Step 7: Arrange beef bites on a platter, sprinkle with chopped green onions and toasted sesame seeds. Serve warm with the sweet soy dipping sauce.

Marinate for at least 30 minutes to ensure tender, flavorful bites. Store beef bites and dipping sauce separately in airtight containers in the fridge; beef bites keep up to 3 days, dipping sauce up to a week. Variations include using flank steak, ribeye, chicken, or tofu. Add gochujang for extra spice.
