Ingredients
  

For the Filling
  • Monterey Jack cheese freshly shredded
  • Cream cheese softened to room temperature
  • Jalapeños seeded and finely diced
  • Bacon cooked and crumbled
  • Garlic minced
For the Coating
  • All-purpose flour
  • Salt
  • Black pepper
  • 2 eggs Eggs beaten with water
  • Water mixed with eggs
  • Bread crumbs mixed with garlic powder and cayenne pepper
  • Garlic powder for breading
  • Cayenne pepper for breading
  • Vegetable or canola oil for frying

Method
 

  1. Step 1: Combine Monterey Jack cheese, cream cheese, diced jalapeños, crumbled bacon, and minced garlic in a large bowl. Mix until smooth and well blended. Scoop about a tablespoon of mixture and roll into balls. Place on parchment-lined baking sheet and freeze for 20–30 minutes.
  2. Step 2: Prepare three shallow dishes: one with flour, salt, and pepper; second with beaten eggs and water; third with bread crumbs mixed with garlic powder and cayenne pepper.
  3. Step 3: Remove filling balls from freezer. Dredge each ball in flour mixture, dip in egg wash, then roll in spiced bread crumbs, pressing gently to coat well.
  4. Step 4: Heat about ¼ inch of oil in a large skillet over medium heat to 350°F (175°C). Fry coated balls in batches, turning occasionally, until golden brown and crispy, about 3 minutes. Transfer to paper towels to drain excess oil.
  5. Step 5: Serve hot, alone or with dips like ranch dressing, chipotle aioli, or honey mustard.

Notes

Freeze filling balls well for easier coating. Maintain oil temperature for crispy bites. Store leftovers in airtight container in fridge up to 3 days. Reheat in oven or air fryer to retain crispiness. Baking alternative: bake at 400°F for 15-20 minutes.
