Ingredients

For the Blueberry Pie Bombs
  • 1 can refrigerated biscuits 8 count
  • 1/4 cup organic blueberry jam
  • 1/4 cup fresh blueberries
  • 4 tbsp melted butter
  • powdered sugar optional, for dusting

Equipment

  • Baking tray
  • Rolling Pin

Method

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking tray or line it with a silicone baking mat.
  2. Step 2: Flatten each biscuit into a thin disc using your hands or a rolling pin, large enough to hold the filling.
  3. Step 3: Spoon a few teaspoons of blueberry jam into the center of each disc, then add 2–3 fresh blueberries on top.
  4. Step 4: Fold the dough over the filling and press the edges firmly to seal so no filling escapes while baking.
  5. Step 5: Dip each sealed pocket into melted butter, coating evenly for a golden, buttery crust.
  6. Step 6: Place the pie bombs on the tray spaced apart and bake for 12–15 minutes until golden brown.
  7. Step 7: Let cool a few minutes, then dust with powdered sugar if desired and serve warm.

Notes

These pie bombs are best served warm. You can swap blueberry jam for other berry jams or add cinnamon or lemon zest for extra flavor. Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. Freeze individually wrapped for longer storage.
