For the Honey Lime Chicken
  • 4 pieces boneless, skinless chicken breasts the star of the dish, tender and juicy
  • 1/4 cup honey adds sweetness
  • 1/4 cup lime juice for a refreshing zing
  • 2 cloves garlic minced for flavor
  • 1 tsp cumin adds warmth
For the Mango Rice
  • 2 cups cooked rice the base for stacking
  • 1 ripe mango diced sweet and juicy
  • 1/4 cup cilantro chopped for freshness
  • 1 lime juiced for extra citrusy flavor

Method
 

  1. Step 1: In a bowl, combine the honey, lime juice, minced garlic, cumin, salt, and pepper. This mixture will marinate your chicken.
  2. Step 2: Add the chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. Step 3: Preheat your grill or skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side until fully cooked.
  4. Step 4: While the chicken rests, mix the cooked rice, diced mango, chopped cilantro, lime juice, and salt in a separate bowl.
  5. Step 5: To assemble, slice the grilled chicken and layer it over the mango rice in stacks. Garnish with fresh cilantro leaves and serve with lime wedges on the side.
