Method
- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a small bowl, mix together the honey, minced garlic, soy sauce, and olive oil. Set this aside.
- Step 3: Season the chicken thighs generously with salt and pepper. Place them in a large baking dish, skin side up.
- Step 4: In a separate bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Arrange them around the chicken in the baking dish.
- Step 5: Drizzle the honey garlic mixture over the chicken and potatoes.
- Step 6: Roast in the preheated oven for 25 minutes.
- Step 7: After 25 minutes, add the trimmed green beans to the baking dish and return to the oven for an additional 15-20 minutes.
- Step 8: Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
