  • 4 thighs chicken thighs juicy and flavorful
  • 1/4 cup honey adds sweetness
  • 4 cloves garlic minced
  • 2 tbsp soy sauce enhances umami
  • 1 tbsp olive oil helps crisp up
  • 1 lb baby potatoes halved
  • 1 lb green beans trimmed
For Garnish
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a small bowl, mix together the honey, minced garlic, soy sauce, and olive oil. Set this aside.
  3. Step 3: Season the chicken thighs generously with salt and pepper. Place them in a large baking dish, skin side up.
  4. Step 4: In a separate bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Arrange them around the chicken in the baking dish.
  5. Step 5: Drizzle the honey garlic mixture over the chicken and potatoes.
  6. Step 6: Roast in the preheated oven for 25 minutes.
  7. Step 7: After 25 minutes, add the trimmed green beans to the baking dish and return to the oven for an additional 15-20 minutes.
  8. Step 8: Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired.
